Green and Good

A very easy recipe if you need to add some greens to your dinner:

1 bunch asparagus - cute in half - blanch in boiling water for 2-3 minutes.
3 handfuls of spinach
2 cloves of garlic
1 cup of pine nuts
1 grated cup of Parmesan cheese
Juice of 1/2 a lemon
olive oil
salt
1 bag of spinach fettuccine

*Cook spinach fettuccine
*While cooking blend together (in blender or cuisine art) cooked asparagus, spinach, grated parm, garlic, 3/4 cup pine nuts. drizzle 1/4 cup olive oil in to blender while blending. If sauce is too thick, add a bit of the pasta water. Add juice of lemon and blend until smooth.
*Mix a cup of the green blended stuff to the pasta when pasta is done cooking. Add more if you like of save for another meal.
*Top with remaining pine nuts and a bit of Parm. YUM!
*Serve as a side or main dish.
